Ingredients
White chocolate with pistachios
- 2 Quest White Chocolate Raspberry
- 1 scoop Quest vanilla protein powder
- 2 tablespoons pistachios without the shell
- 2.5 ounces creamy Greek yogurt cheese, room temperature
- 1/2 cup sugar-free white chocolate chips
- 1 teaspoon coconut oil
- 1 tablespoon crushed pistachios, to garnish
method
- Preheat oven to 350 degrees Fahrenheit and prepare a parchment paper baking tray.
- Cut Quest boards into small pieces and place them on a baking tray.
- Bake for 5 minutes and golden brown. Let the pieces cool completely.
- Put the Quest Bar pieces, protein powder, pistachios and 1 tablespoon of white chocolate chips in a food processor or blender and mix them well until well combined.
- Add cream cheese and mix until moist crumbs form and stick together.
- Separate the mixture into 12 equal-sized balls and place them in a frying pan lined with parchment paper.
- Cool while melting and preparing white chocolate.
- Melt white chocolate chips and coconut oil together until smooth for 15 seconds in the microwave, stirring between each.
- Dip each truffle in the chocolate until completely covered with a fork.
- Let the excess chocolate drip, then put the truffles back on the baking tray.
- Cover with crushed pistachios and let cool until chocolate is solid.
