Ingredients

- ½ cup full fat coconut milk
- Half a cup of zero-calorie sweetener
- Half a cup of lemon juice
- grated 1 lemon
- 1 tablespoon cornstarch
- 1 tablespoon butter
- Pinch of turmeric for color (optional)
method
- Preheat the oven to 350 degrees Fahrenheit and prepare a baking tray with parchment paper.
- Cut the Lemon Quest molds into small pieces and place them on the baking tray.
- Bake for 6-7 minutes and golden brown, let cool and then transfer to a blender and blend until crumbly.
- Add the crumbs, almond flour, protein powder, melted butter, and water to the mixer fitted with the paddle attachment (or you can use a hand mixer if needed) and blend until dough begins to form.
- Separate the dough into 9 equal-sized balls and press them down using the back of a teaspoon to make a hole in the middle.
- Put the biscuits on the baking tray and bake for 6-8 minutes until golden brown.
- Meanwhile, place filling ingredients in a small saucepan over low to medium heat.
- Stir for 5 minutes until firm. to calm down.
- It will thicken more when it cools down. Once the cookies and filling have cooled, fill each cookie cavity with the lemon filling and serve.
