  • ½ cup full fat coconut milk
  • Half a cup of zero-calorie sweetener
  • Half a cup of lemon juice
  • grated 1 lemon
  • 1 tablespoon cornstarch
  • 1 tablespoon butter
  • Pinch of turmeric for color (optional)


  1. Preheat the oven to 350 degrees Fahrenheit and prepare a baking tray with parchment paper.
  2. Cut the Lemon Quest molds into small pieces and place them on the baking tray.
  3. Bake for 6-7 minutes and golden brown, let cool and then transfer to a blender and blend until crumbly.
  4. Add the crumbs, almond flour, protein powder, melted butter, and water to the mixer fitted with the paddle attachment (or you can use a hand mixer if needed) and blend until dough begins to form.
  5. Separate the dough into 9 equal-sized balls and press them down using the back of a teaspoon to make a hole in the middle.
  6. Put the biscuits on the baking tray and bake for 6-8 minutes until golden brown.
  7. Meanwhile, place filling ingredients in a small saucepan over low to medium heat.
  8. Stir for 5 minutes until firm. to calm down.
  9. It will thicken more when it cools down. Once the cookies and filling have cooled, fill each cookie cavity with the lemon filling and serve.
